In honor of Valentine’s Day a fun, easy recipe for vegan Valentine sugar cookies! On Monday, we had some special guests over and I thought it would be perfect for some cookie decorating. I made the dough the night before and then rolled it out so the boys could cut, bake and decorate them.
Quick Photo Tip: If your kitchen is dark, try rolling the cookie dough out on your dining room table by some windows. It not only allows for the kids to be at the right level, but have some great natural light pouring in on them!

The boys were pretty excited to be stamping out cookies. Not sure how this one would bake out, but you have to love them for trying. This recipe is easy to make and no one will know it is vegan!

Vegan Valentine’s Sugar Cookies (Recipe from Vegan Cookies Invade Your Cookie Jar)

Ingredients

2 1/2 cups flour

2 Tbs cornstarch

1/4 tsp salt

1/4 tsp baking powder

1/2 cup Earth Balance Margarine, slightly softened

1/2 cup non hydrogenated vegetable shortening

1 cup sugar

2 tsps pure vanilla extract

1/2 tsp almond extract (or more vanilla extract)

1/4 cup nondairy milk.

 

Directions:

1. Sift together flour, cornstarch, salt, and baking powder in a medium mixing bowl and set aside.

2. In a large mixing bowl, using beaters and cream together the margarine, shortening, and sugar until light and fluffy (about 4 minutes). Scrape the sides of the bowl occasionally. Beat in the vanilla extract, almond extract, and nondairy milk to combine.

3. Beat in half the flour mixture to moisten and then carefully mix in the rest of the flour mixture to form a soft dough.

4. Divide the mixture into two discs about 1 inch thick. Wrap with plastic wrap and chill for a few hours (or overnight).

5. Preheat the oven to 350. Line two baking sheets with parchment paper. Lightly flour a workspace. Roll the dough out to your desired thickness and cut with shapes (heart’s for Valentine’s Day!) and place on cookie sheet. Leave about an inch of space between the cookies on the cookie sheet.

6. Bake for 8-10 minutes, or until the edges turn golden brown. Remove from oven and let cool. Top with icing (see below) and sprinkles for a festive cookie!

 

Confectioner’s Icing

Ingredients:

2 cups sifted powdered sugar

3 Tbs nondairy milk

1/2 tsp pure vanilla extract

Using a fork, mix together all of the ingredients in a mixing bowl. Combine until a glaze is formed. If icing is too thick, add 1 tbs at a time of either nondairy milk or water. If too thin, add more powdered sugar until desired consistency is formed!

After decorating your cookies, enjoy! (Milo scraped all of his icing and sprinkles off and ate those before eating his cookie!)
